Welcome to Food Technology — Academic Support. We will study Food Chemistry Foundations: Water Activity, Carbohydrates, Proteins and Lipids, work through an example, and practise using the course's learning material. B.Tech. Food Technology: 4 years; a B.Sc. route may be 3/4 years — confirm the award. Year-wise / professional-phase study plans, original foundation workshops, answered practice and available protected LMS readings. Sign in and use the study header to open your authorised course. Select this published lesson. Start Course Tutor with Auto audio on: it teaches continuously, answers a typed question, then resumes. Moisture content is the amount of water in a food. On a wet basis, moisture = mass of water divided by total mass of food. On a dry basis, moisture = mass of water divided by mass of dry solids. Example 2 — Water activity and ERH. A dried fruit has aw = 0.65. Its ERH is 65 per cent. If stored unpacked in air at 80 per cent relative humidity, it will gain moisture and its aw will rise, increasing the risk of mould growth. Moisture-proof packaging is needed. Which mistake would change the reasoning in this example? Treating moisture content and water activity as the same. Fix: moisture is quantity; aw is availability. Calling sucrose a reducing sugar. Fix: sucrose is non-reducing; glucose, fructose, lactose and maltose are reducing. Confusing gelatinisation and retrogradation. Ask Course Tutor: please explain this step from the example. If stored unpacked in air at 80 per cent relative humidity, it will gain moisture and its aw will rise, increasing the risk of mould growth. Why does it follow? Add what you tried, so the explanation addresses your difficulty. Now try the source practice. Define water activity. Pause before the answer. The source answer is: The ratio of the vapour pressure of water in a food to that of pure water at the same temperature. Compare your reasoning as well as the result. If your response differs, return to the worked example and identify the step that needs correction. Explain the key idea in your own words, revisit any mistaken step, then continue to the next lesson. Use Stop to end Course Tutor when you finish.

How online study can help you

Fit study around your day

Plan short study sessions around work, college or family commitments. A regular weekly routine still matters.

Revisit difficult concepts

Return to available readings and worked examples during your access period, instead of relying on one classroom explanation.

Learn without a daily commute

Study from a suitable location with an internet connection and compatible device. Practical or clinical requirements, where applicable, remain separate.

Turn reading into active revision

Make notes, attempt the available exercises and use the Course Tutor to explore questions. AI guidance can make mistakes; verify important answers.

How the study sessions work

Self-paced reading, tutor-guided explanation and independent practice. These are suggested learning sessions, not a published live faculty timetable. Teacher-led feedback is available only when separately confirmed for your programme.

  1. Read and recall: Read the selected unit, close the text, and state its main idea and two supporting reasons in your own words.
  2. Tutor-guided explanation: Ask Course Tutor to explain one specific difficulty and show a worked example. Check citations, calculations and legal/clinical statements against the primary source.
  3. Apply independently: Attempt a new problem, case analysis, code task or evidence-based essay before opening the model approach.
  4. Check and correct: Compare your result with the marking criteria. Keep the original answer, correction, reason for the error and one transfer question.
  5. Review and assess: Revisit the unit in the next study session and at the end of the study block. Combine short recall, application and a cumulative assignment.

Assessment and feedback

Use a short diagnostic, unit practice, a study-block assignment and a cumulative review. Each academic year page includes a worked foundation workshop and answered self-checks; internship sections instead explain institutional requirements.
