Plan a kitchen preparation yield
Adapted from the course lessons: Knife Skills and Classical Vegetable Cuts: Julienne, Brunoise, Macédoine, Paysanne and More. Introductory written calculation only. It does not involve knife use, food preparation, accredited practical training, an awarded degree or a professional kitchen qualification.
In a fictional written kitchen-planning exercise, usable yield is prepared weight divided by as-purchased weight. Divide the required usable weight by the yield fraction to estimate the purchase weight. Real kitchen yield, hygiene and hands-on skills require separate practical training.
Worked example
Fictional carrots: 2.0 kg purchased produces 1.5 kg usable julienne, a 75% yield. If 3.0 kg usable julienne is required at that yield, estimate 3.0 ÷ 0.75 = 4.0 kg purchased.
Try it yourself
A separate fictional recipe needs 2.4 kg peeled and diced potato at an estimated 80% usable yield. How many kilograms of potato should be purchased?
Reveal the answer and reasoning
2.4 ÷ 0.80 = 3.0 kg to purchase. Check: 3.0 × 0.80 = 2.4 kg usable. This is a written planning estimate, not a measured kitchen yield.
Try your own answer before comparing it with the worked explanation. This optional check is not a grade or a saved course-completion record.
